The essence of great chardonnay. White peach, grapefruit and a hint of spicy oak. Beautifully balanced with a lovely lingering finish. Still very youthful but promises to reward good cellaring with additional power and complexity.
 
Tasting Notes: Delicate, understated and restrained. Baked apples, spice and fresh cream. The lees provided both substance and a heightened umami like savouriness. Beautifully balanced with a lovely lingering finish. Still very youthful but promises to reward good cellaring with additional power and complexity.
 
Winemaking Notes: Hand picked 9th February 2016 Crushed and pressed straight to oak (30% new). Both primary fermentation and malolactic were natural. Elevage: 10 months on lees in oak before being racked and blended in preparation for bottling.
 
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rich soils are perfect for growing Pinot Noir and Chardonnay. 2016 will be remembered as one of the warmest and earliest harvests on record.
