Coombe Farm Wines
Coombe Farm's Cabernet Sauvignon and Merlot are planted in one of the coolest parts of the vineyard. This is ideal in warm dry years that allow slow and full ripening, as in 2013, so this wine is ripe and rich, but more savoury than the 2012, not as juicy fruit.
Each variety was fermented and matured separately in French oak barriques and the final wine was blended just before bottling, once the most balanced and harmonious combination was determined. The 2013 wine is 82% Cabernet Sauvignon and 18% Merlot.
The wine has less acid than the 2013, and will cellar well and develop over 5-10 years. This is a delicious example of the a fine Yarra Valley Cabernet Blend.
