Cellaring: This wine will continue to develop beautifully over the next 10 years if stored correctly.



Vintage Conditions: The growing season in 2012 was long, cool and free of drama. Timely rainfall received in summer followed by a dry, cool autumn. Near perfect.

Winemaking: Fruit was hand harvested and hand sorted over a triage table. A combination of 40% whole bunch and 60% whole berry was tipped into an open fermenter. Some foot plunging at the beginning followed by some remontage and foot plunging toward the end of ferment. 22 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel via gravity. Allowed to mature for 12 months at 16°C in 500L and 2300L casks.
